Tie Breaker Chocolate Cake ! Yum

Yesterday Mom was craving for chocolate cake and she seldom likes chocolate cake so I was really surprised and frantic because I don't have much recipe of chocolate cake since she doesn't like me to bake said type of cake. She really really really wanted to each cake so I scrambled about looking at all of the recipe book I have on chocolate cake. I couldn't seem to find any that she likes.

She wanted me to bake a chocolate cake similar to Orange Brutus' Chocolate monster. I haven't even baked a choco cake before and here she wants that kind of cake. I was in despair at that time and so I went online and searched for a recipe that she would like and I filtered the search with recipes that have photos so she can tell me which one she wants. I finally found one but I didn't know I was gonna place it in my blog so I don't remember the link or whose recipe I used. I tweaked it a bit. I started baking and when it was cooked I had mom taste the cake and she said it was too bitter. So I baked another cake and lessen the cocoa and added more sugar to it. Finally she liked that one.

Then she wanted me to put a filling and it's a problem again because I've never cooked a filling of any kind well except that of pies because I know some. Then thankfully I remembered My aunt's recipe of chocolate cream boat tart and so I used that recipe. When it was done she didn't like it because there is a certain smell she didn't like and so I decided to tweak the cream filling recipe and she liked the result. Whew that was a lot of work. I was suppose to just slice the one cake in half and put the filling in but I didn't want to waste the other cake and so I decided to just sandwich the cake together. Done.

So I thought I was finally done then Mom wanted me to put icing on top and so I scavenge my recipes and found one and so I tried it. Topped it on the cake and prayed that I'm done.
Horrayyy finally I'm done.Mom didn't quite taste it until later that night in her room. She sliced it and took a bite and she praised it to high heaven... She said it is very delicious. She was the one who named it tie breaker chocolate cake because she said the bitterness and sweetness of both the cake blended in and the filling and icing made it taste even better. If you know what I mean.Warning though mom couldn't sleep with all that chocolate in it I just thought you should all know.

So here is the recipe in case any of you would want to try it. And ohh pics too.

I used 9x6 pan
Filling:
2 t all purpose flour
1 cup evaporated milk
1/4 cup condensed milk
1/2 cup + 1 T light corn syrup
1/4 cup white sugar
1 tsp. vanilla
1 T butter

= mix together in a pan with a whisk and then turn on heat stir constantly until thick then add the butter. (depends on you how thick or thin you want your filling to be)

Bottom Cake :Preheated 300 F
1 c all purpose flour
11/8 cup sugar
1/4 c cocoa
1 t baking soda
1 egg
1/2 tsp salt
1/2 cup evaporated milk
1/2 cup oil
3/4 t vanilla
1/2 c boiling water
= just mix everything in a mixer then pour on greased and lined with wax paper pan. Slow bake for an hour til toothpick or knife inserted comes out clean.

Top Cake:
same ingredients except for the measurement of sugar and cocoa

1 c sugar
1/4+1/8 c cocoa

= baked same way.

Let cake cool completely before putting icing

Chocolate icing:
1 pc. egg
3/4 c sugar
1/4 c flour
1/2 c cocoa
1 c water
1 c evaporated milk
3 T butter (to be added at the end)

mix together and then cook until thick or which ever consistency you like.
